Roasted Tomato Soup w/Bruschetta Grilled Cheese

I've been a fan of tomato soup and grilled cheese my entire life. After witnessing one of my favorite celebrity chefs make tomato soup I had to try it. Make it yourself and you'll know what I'm talking about when I say it's spectacular. This is no ordinary grilled cheese and tomato soup.

For the soup

Ingredients:
10-12 tomatoes (use a variety of good quality tomatoes)
1qt chicken broth
4 cloves garlic
1 medium onion chopped
2Tbsp olive oil
1/3C heavy cream
1/4C chopped basil
salt & pepper to taste

For the grilled cheese

Ingredients:
8 slices of French Bread
2 tomatoes thinly sliced
1/4C chopped basil
4 slices mozzarella
2Tbsp olive oil

Directions (soup):
Preheat oven to 425ºf. Core tomatoes, slice in half. Spread tomatoes, onion and garlic on a baking sheet. Drizzle with olive oil and season with salt & pepper. Roast in oven for 20-25 mins. Transfer tomatoes, onion and garlic to large stock pot. Pour in chicken broth and bring to a slow simmer for about 15-20mins or until reduced by a third. Add basil and puree using an immersion blender (if you don't have am immersion blender, tomatoes can be transferred to a blender in batches). Stir in cream and serve.

Directions (Grilled cheese):
Preheat large fry pan or griddle to med high. Brush one side of each bread slice. Assemble sandwiches each with one slice mozzarella, two slices tomato, basil and brown each side.
