Perfect Prime Rib

5-6lb Prime Rib Roast (I recommend bone in)
2tbls olive oil
8-10 finely chopped garlic cloves
2tsp kosher salt
2tsp cracked pepper
1tbls dried thyme
2 sprigs rosemary

Directions:
Let beef roast stand at room temperature for 30min. Mix together oil, garlic, salt, pepper, thyme, and rosemary. Coat the beef roast with the mixture. Place in roasting pan and cook using one of the following methods: (let prime rib rest for 15-20min before carving)

For regular roasting - 325º 15min per pound
For slow roasting -225º 23min per pound

Medium rare roast will read 130º - 135º
Medium 140º - 145º

*temp will raise about 10º after cooking
